A homage to the nostalgic flavours of Peranakan kueh, we put a spin on these traditional Lunar New Year treats by slow cooking gula melaka and pandan leaves together with fresh pineapple, before rolling the resulting jam into balls by hand and encasing each piece in a fragrant, melt-in-your-mouth Pandan-infused butter pastry.
